Meal Worm Prep 101

Don Bugito hired me for a week for the San Francisco Food Festival 2012 and I'm learning a lot about bugitos and falling in love really fast with this foggy, hilly, jogging at the beach kind of city.

Here's part of the prep process for the meal worms. Just as any protein there's cleansing, sorting the edibles from the ones that didn't make it and finally a benevolent freezing until they are spiced up.
